Ingredients
- 1 lb ground turkey
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 cup frozen mixed vegetables
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup shredded cheese (optional)
Instructions
- In a large skillet, heat some oil over medium heat and sauté the chopped onion until translucent (about 5 minutes).
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the ground turkey and cook until browned and fully cooked through, about 7-10 minutes.
- Incorporate diced tomatoes and frozen mixed vegetables into the skillet.
- Sprinkle in Italian seasoning, salt, and pepper to taste; stir to combine.
- Fold in the cooked rice and let it cook for another 2-3 minutes.
- If desired, sprinkle shredded cheese on top and let it melt slightly before serving.
