Description

Ingredients

  • 1 lb ground turkey
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup frozen mixed vegetables
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large skillet, heat some oil over medium heat and sauté the chopped onion until translucent (about 5 minutes).
  2. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the ground turkey and cook until browned and fully cooked through, about 7-10 minutes.
  4. Incorporate diced tomatoes and frozen mixed vegetables into the skillet.
  5. Sprinkle in Italian seasoning, salt, and pepper to taste; stir to combine.
  6. Fold in the cooked rice and let it cook for another 2-3 minutes.
  7. If desired, sprinkle shredded cheese on top and let it melt slightly before serving.
