Description

Comforting slow-cooked beef sandwiches served with savory broth for dipping.

Ingredients

  • 23 lbs beef chuck roast
  • 1 medium onion, sliced
  • 23 cloves minced garlic
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • To taste salt and pepper
  • 46 pieces hoagie rolls
  • To taste sliced provolone cheese (optional)

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Sauté the sliced onions in a skillet over medium heat until soft and translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Place the seasoned beef in the slow cooker, followed by sautéed onions and garlic. Pour in beef broth and Worcestershire sauce.
  4. Cover and cook on low for 6-8 hours, or on high for 4 hours, until the beef is fork-tender.
  5. Shred the beef with two forks and mix back into the broth.
  6. Scoop the beef onto hoagie rolls, top with provolone cheese, and broil until the cheese is melty.
  7. Serve with a cup of broth for dipping.

Notes

For extra flavor, sear the beef before adding to the slow cooker. Adjust garlic and onion amounts as desired.
