Description

A nutritious and delicious berry bake packed with protein, perfect for breakfast or a healthy snack.


Ingredients

  • 2 cups Full-Fat Cottage Cheese
  • 3 large Eggs
  • ½ cup Almond Flour
  • ¼ cup Honey or Maple Syrup (or sugar-free alternative)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
  2. Blend cottage cheese and eggs until smooth and creamy.
  3. Transfer to a bowl and mix in almond flour, sweetener, vanilla, lemon zest, and baking powder.
  4. Gently fold in mixed berries.
  5. Pour batter into the dish and spread evenly.
  6. Bake for 35–40 minutes until golden and center is set.
  7. Let cool for 20–30 minutes before slicing.
