Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/3 cup hot honey (store-bought or homemade)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • Optional: chili flakes for extra heat

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix hot honey, olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Pat the chicken thighs dry and place them on the prepared baking sheet.
  4. Brush each piece of chicken generously with the hot honey mixture.
  5. In a separate bowl, mix feta cheese and panko breadcrumbs. Press this mixture on top of each chicken thigh, gently patting to help it stick.
  6. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the feta topping is golden and crisp.
  7. Garnish with fresh parsley and chili flakes, if desired. Serve hot.
