These soft apple cookies are light, fruity, and spiced just right—perfect for tea time, holidays, or anytime snacking.
Ingredients
2 eggs (room temperature)
100g (½ cup or 3.5 oz) sugar
A pinch of salt
100g (3.5 oz) butter, softened
320–340g (2¼–2½ cups or about 11 oz) plain flour
14g (3 teaspoons) baking powder
2 apples, peeled and grated
Icing sugar (for dusting)
Optional: Cinnamon (to mix with icing sugar for extra flavor)

Prepare the Wet Ingredients
In a large bowl, beat eggs with sugar and salt until pale and fluffy. Add softened butter and mix until smooth. -
Add Dry Ingredients
Sift flour and baking powder in a separate bowl. Gradually add to the wet mixture, stirring to form a soft dough. Add more flour if too sticky. -
Add Apples
Fold in grated apples gently until evenly combined. -
Shape the Cookies
Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper. Form small balls (walnut-sized) and place 2 inches apart. -
Bake
Bake for 12–15 minutes until edges are golden and centers are set. Let cool on tray for 5 minutes, then transfer to wire rack.

Once cooled, dust generously with icing sugar. Mix with cinnamon for added flavor if desired.
