Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh basil leaves
- 2 ripe tomatoes, chopped
- 8 oz burrata cheese
- 3 garlic cloves, minced
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat your oven to 375°F (190°C). Lightly pound chicken breasts to an even thickness.
- Season chicken cutlets with salt, pepper, and minced garlic.
- Heat olive oil in a skillet over medium-high heat. Sear chicken cutlets for 4-5 minutes on each side until golden brown.
- Remove cutlets and add chopped tomatoes and basil to the skillet; cook until fragrant.
- Return chicken to skillet, top with burrata cheese, and bake for 5 minutes until the cheese melts.
- Drizzle with fresh lemon juice before serving.
