Ingredients

4 large bell peppers (red, yellow, or green)

1 lb ground beef or Italian sausage

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1/2 cup grated Parmesan cheese

1 tsp dried oregano

1/2 tsp crushed red pepper flakes (optional)

Salt and black pepper to taste

1 cup shredded mozzarella cheese

2 tbsp olive oil

Fresh basil or parsley for garnish
Instructions

Preheat oven to 375°F (190°C).

Cut the tops off the bell peppers, remove seeds and membranes. Lightly drizzle with olive oil and roast for 10–15 minutes.

In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.

Add ground beef or sausage and cook until browned.

Stir in cooked rice, diced tomatoes, Parmesan, oregano, red pepper flakes, salt, and pepper. Simmer for 5–10 minutes.

Stuff each pepper with the mixture. Place in a baking dish and top with shredded mozzarella.

Bake for 25–30 minutes, until cheese is melted and bubbly.

Garnish with fresh basil or parsley and serve hot.
