John Wayne Casserole: 7 Comforting Bites of Bliss

Description

A hearty casserole inspired by John Wayne, featuring ground beef, biscuits, and cheese.


Ingredients

  • 1 lb lean ground beef
  • 1 cup water
  • 1 oz taco seasoning
  • 1 cup diced yellow onion
  • 20 oz Rotel diced tomatoes and green chilies, drained
  • 12 oz canned corn, drained
  • 3 cups Bisquick mix
  • 1 cup water
  • 7.5 oz Philadelphia whipped chive cream cheese
  • ½ cup mayo
  • 1 tablespoon garlic powder
  • ½ teaspoon salt
  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Preheat oven to 325F.
  2. Dump ground beef into a large saute pan over medium-high heat.
  3. Crumble ground beef well as it cooks.
  4. Once the ground beef is fully cooked, drain the grease from the pan.
  5. Add the water and taco seasoning to the pan with the ground beef.
  6. Stir well and leave to simmer over medium-high heat for 4 minutes.
  7. Add the diced onions, Rotel, and corn to the pan.
  8. Stir well and reduce the heat to low.
  9. Dump the Bisquick mix and water into a mixing bowl.
  10. Stir until a sticky dough forms.
  11. Dump the dough into the bottom of a greased 9 x 13 inch baking dish and spread it out evenly.
  12. Dump the ground beef mixture on top of the dough and spread it out evenly.
  13. Dump the cream cheese, mayo, onion powder, and salt into a mixing bowl and cream together with an electric mixer until smooth.
  14. Spoon the cream cheese mixture on top of the ground beef mixture in the baking dish and spread it out as evenly as possible.
  15. Sprinkle the shredded mozzarella and cheddar cheese on top.
  16. Place the dish in the oven and bake for 40 minutes.
  17. After 40 minutes remove the casserole from the oven and allow it to sit for a few minutes before slicing and serving.
  18. Enjoy!

Notes

  • Adjust seasoning to taste.
  • Can be made ahead and stored in the refrigerator before baking.
  • Serve with sour cream or salsa for added flavor.
