Description
A hearty casserole inspired by John Wayne, featuring ground beef, biscuits, and cheese.
Ingredients
- 1 lb lean ground beef
- 1 cup water
- 1 oz taco seasoning
- 1 cup diced yellow onion
- 20 oz Rotel diced tomatoes and green chilies, drained
- 12 oz canned corn, drained
- 3 cups Bisquick mix
- 1 cup water
- 7.5 oz Philadelphia whipped chive cream cheese
- ½ cup mayo
- 1 tablespoon garlic powder
- ½ teaspoon salt
- 2 cups shredded mozzarella and cheddar cheese blend
Instructions
- Preheat oven to 325F.
- Dump ground beef into a large saute pan over medium-high heat.
- Crumble ground beef well as it cooks.
- Once the ground beef is fully cooked, drain the grease from the pan.
- Add the water and taco seasoning to the pan with the ground beef.
- Stir well and leave to simmer over medium-high heat for 4 minutes.
- Add the diced onions, Rotel, and corn to the pan.
- Stir well and reduce the heat to low.
- Dump the Bisquick mix and water into a mixing bowl.
- Stir until a sticky dough forms.
- Dump the dough into the bottom of a greased 9 x 13 inch baking dish and spread it out evenly.
- Dump the ground beef mixture on top of the dough and spread it out evenly.
- Dump the cream cheese, mayo, onion powder, and salt into a mixing bowl and cream together with an electric mixer until smooth.
- Spoon the cream cheese mixture on top of the ground beef mixture in the baking dish and spread it out as evenly as possible.
- Sprinkle the shredded mozzarella and cheddar cheese on top.
- Place the dish in the oven and bake for 40 minutes.
- After 40 minutes remove the casserole from the oven and allow it to sit for a few minutes before slicing and serving.

Notes
- Adjust seasoning to taste.
- Can be made ahead and stored in the refrigerator before baking.
- Serve with sour cream or salsa for added flavor.
