Description

Ingredients

  • 2 medium green cabbages
  • 2 tbsp olive oil or butter
  • Salt & pepper, to taste
  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • ½ lb shrimp, peeled & deveined
  • ½ cup onion, chopped
  • ½ cup bell peppers (red & green), diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or bacon fat
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)
  • ½ cup shredded mozzarella or cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice off the tops of the cabbages and carefully core out the centers to make room for stuffing.
  3. Rub the insides with olive oil, salt, and pepper. Place in a baking dish.
  4. In a skillet, heat olive oil or bacon fat over medium heat.
  5. Sauté onion, bell peppers, and garlic until softened.
  6. Add sausage slices and cook until browned.
  7. Toss in shrimp, season with Cajun seasoning, paprika, garlic powder, cayenne, salt, and pepper.
  8. Cook until shrimp turn pink (about 2–3 minutes).
  9. Spoon the shrimp and sausage mixture into each cabbage.
  10. Add cheese if using.
  11. Cover the dish loosely with foil and bake for 40–50 minutes, until the cabbage is tender.
  12. Remove foil and bake for an additional 10 minutes for a roasted finish.
  13. Garnish with chopped parsley or green onions.
  14. Slice into wedges and serve hot.
