Ingredients
- 2 cups cottage cheese
- 1 cup canned pumpkin
- 1/2 cup honey or maple syrup
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a springform pan.
- In a blender, blend the cottage cheese until smooth.
- Add the pumpkin, honey (or maple syrup), eggs, vanilla extract, pumpkin pie spice, and salt. Blend until well combined.
- Pour the mixture into the prepared springform pan.
- Bake for 40–45 minutes or until the center is set.
- Let it cool before refrigerating for at least 2 hours.
- Serve chilled and enjoy!
