Description

A healthier twist on classic cheesecake featuring creamy cottage cheese and seasonal pumpkin, perfect for fall gatherings.


Ingredients

  • 2 cups cottage cheese
  • 1 cup canned pumpkin
  • 1/2 cup honey or maple syrup
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a springform pan.
  2. In a blender, blend the cottage cheese until smooth.
  3. Add the pumpkin, honey (or maple syrup), eggs, vanilla extract, pumpkin pie spice, and salt. Blend until well combined.
  4. Pour the mixture into the prepared springform pan.
  5. Bake for 40–45 minutes or until the center is set.
  6. Let it cool before refrigerating for at least 2 hours.
