A delightful cheesecake combining rich creaminess with crunchy Maltesers and the warmth of Baileys Irish Cream, perfect for any occasion.
Ingredients
- 300g chocolate digestives, crushed
- 90g unsalted butter, melted
- 400g cream cheese
- 100g icing sugar
- 200ml Baileys Irish Cream
- 300g Maltesers, plus extra for decoration
- 300ml double cream
Instructions
- Preheat the oven to 180°C (350°F) and grease a springform pan.
- Mix the crushed chocolate digestives with the melted butter and press into the base of the pan. Chill in the fridge.
- In a bowl, beat together the cream cheese and icing sugar until smooth.
- Add the Baileys and mix until combined.
- In another bowl, whip the double cream until it forms soft peaks, then fold it into the cream cheese mixture.
- Gently fold in the Maltesers.
- Pour the cheesecake mixture over the biscuit base and smooth the top.
- Chill in the fridge for at least 240 minutes or until set.
- Decorate with extra Maltesers before serving.
Notes
Store leftovers in the fridge, best enjoyed within 3 days.
