Description

A delightful cheesecake combining rich creaminess with crunchy Maltesers and the warmth of Baileys Irish Cream, perfect for any occasion.


Ingredients

  • 300g chocolate digestives, crushed
  • 90g unsalted butter, melted
  • 400g cream cheese
  • 100g icing sugar
  • 200ml Baileys Irish Cream
  • 300g Maltesers, plus extra for decoration
  • 300ml double cream

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a springform pan.
  2. Mix the crushed chocolate digestives with the melted butter and press into the base of the pan. Chill in the fridge.
  3. In a bowl, beat together the cream cheese and icing sugar until smooth.
  4. Add the Baileys and mix until combined.
  5. In another bowl, whip the double cream until it forms soft peaks, then fold it into the cream cheese mixture.
  6. Gently fold in the Maltesers.
  7. Pour the cheesecake mixture over the biscuit base and smooth the top.
  8. Chill in the fridge for at least 240 minutes or until set.
  9. Decorate with extra Maltesers before serving.

Notes

Store leftovers in the fridge, best enjoyed within 3 days.
