Description
A delicious and nutritious salad featuring roasted sweet potatoes, drizzled with a maple syrup dressing and topped with whipped tahini.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup maple syrup
- 1/4 cup tahini
- 1 tablespoon lemon juice
- 1/4 cup water (adjust for desired consistency)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, prepare the whipped tahini by blending tahini, maple syrup, lemon juice, and water until smooth.
- Once the sweet potatoes are done, let them cool slightly before combining them with the whipped tahini.
- Garnish with chopped parsley and pecans if using, and serve warm or at room temperature.
Notes
- For a vegan version, ensure the maple syrup is pure and not mixed with any animal products.
- This salad can be served warm or chilled.
- Feel free to add other vegetables or nuts for extra texture and flavor.
