Description

A delicious and nutritious salad featuring roasted sweet potatoes, drizzled with a maple syrup dressing and topped with whipped tahini.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup maple syrup
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • 1/4 cup water (adjust for desired consistency)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, prepare the whipped tahini by blending tahini, maple syrup, lemon juice, and water until smooth.
  5. Once the sweet potatoes are done, let them cool slightly before combining them with the whipped tahini.
  6. Garnish with chopped parsley and pecans if using, and serve warm or at room temperature.
