Description

A hearty and flavorful Mexican Ground Beef and Potato Skillet that’s perfect for a quick weeknight dinner.


Ingredients

  • 2 tablespoons avocado oil
  • 1 pound potatoes cut into 1/2 inch cubes
  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 1 red bell pepper diced
  • Kosher salt and freshly ground black pepper to taste, approximately 1 – 1 1/2 teaspoons kosher salt
  • 4 ounces diced green chiles
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup cilantro chopped
  • 1/2 cup shredded cheese

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the potatoes and cook, stirring often, for about 6 minutes until golden and tender.
  3. Push the potatoes to one side of the skillet and add the ground beef.
  4. Crumble the beef and add the onion and red bell pepper.
  5. Season with salt and pepper and cook while breaking the beef apart.
  6. Add the green chiles, spices, and cilantro. Stir and cook until potatoes are tender and beef is cooked through, about 6-8 minutes.
  7. Taste for seasoning and add salt if needed.
  8. Top with cheese and cook for another minute until melted. Garnish with cilantro if desired and serve hot.

Notes

  • This dish can be customized with your favorite vegetables.
  • Adjust the spice level by adding more chili powder if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
