Description

A refreshing and vibrant Mexican Street Corn Pasta Salad that combines the flavors of elote with pasta for a delicious twist.


Ingredients

  • 8 oz pasta (your choice)
  • 2 cups corn (fresh or canned)
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the corn, red onion, cherry tomatoes, cilantro, and cotija cheese.
  3. Add the cooled pasta to the bowl.
  4. In a separate bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
