Ingredients
- 2 prepared pie crusts (14–16 oz), thawed if frozen
- Flour, for dusting
- 1/4 cup unsweetened apple butter
- 2 tablespoons whole-grain mustard
- 2 medium apples, thinly sliced (about 1/8 inch thick)
- 3 slices deli ham (about 3 oz), cut into 6 pieces
- 6 tablespoons shredded Gruyère cheese
- 2 teaspoons fresh thyme, coarsely chopped, plus extra for garnish
- 1/4 teaspoon ground black pepper
- 1 large egg
- 1 tablespoon water
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet with cooking spray.
- On a lightly floured surface, roll out one of the pie crusts into a 12-inch circle. Use a 6-inch round cutter (or a small bowl) to cut two 6-inch rounds from the dough. Gather the dough scraps, form into a ball, and roll it out again to cut another 6-inch round. Repeat this process with the second pie crust, yielding 6 rounds in total.
- In a small bowl, mix together the apple butter and mustard. Spread 1 tablespoon of the apple butter mixture onto each dough round, leaving a 1-inch border around the edges.
- Arrange the apple slices and ham pieces decoratively on top of each crust. Sprinkle each galette with Gruyère cheese, thyme, and ground pepper.
- Fold the edges of the dough up around the filling, leaving the center exposed.
- Whisk the egg and water together in a small bowl. Brush the edges of each galette with the egg wash to help create a golden crust.
- Place the galettes on the prepared baking sheet and bake for 30 minutes, or until the apples are tender and the crust is a deep golden brown.
- After baking, remove the galettes from the oven and garnish with additional fresh thyme if desired. Serve warm and enjoy your Mini Apple Ham Gruyere bites.

- For best results, use tart apples like Granny Smith or Honeycrisp.
- If Gruyère is unavailable, Swiss or sharp white cheddar can be substituted.
