Ingredients

  • 1 cup All-purpose Flour
  • 1 cup Yellow Cornmeal
  • 1 tbsp Baking Powder
  • 2 tbsp Granulated Sugar
  • 1 tsp Salt
  • 2 large Eggs
  • 1 cup Milk
  • 8 pieces Cocktail Wieners
  • 4 oz Cheddar Cheese
  • 2 cups Oil for Frying
  • 8 pieces Toothpicks

Instructions

  1. Cut each cocktail wiener in half lengthwise. Place a piece of cheddar cheese inside each half and secure with a toothpick.
  2. In a large mixing bowl, combine all-purpose flour, yellow cornmeal, baking powder, granulated sugar, salt, eggs, and milk. Whisk until smooth.
  3. Heat about 2 inches of vegetable oil in a deep pot to 325-350°F.
  4. Dip each prepared wiener in the batter, allowing excess to drip off, then carefully place into the hot oil.
  5. Fry the mini corn dogs in batches for 1-2 minutes until golden brown and crispy.
  6. Remove the mini corn dogs from the oil and drain on a paper towel-lined plate.
