Instructions

  1. Preheat oven to 160 °C (320°F) with fan function. Line an 8.5 x 4.5 inch loaf tin with greased baking paper.
  2. Mash ripe bananas until smooth and creamy. Set aside.
  3. In a separate bowl, combine flour, cornstarch, baking powder, baking soda, salt, and cinnamon. Whisk until well-mixed.
  4. In a large mixing bowl, cream butter, brown sugar, and vegetable oil with an electric mixer for about 2 minutes until light and fluffy.
  5. Incorporate the egg into the creamed mixture, mixing until smooth and well-blended.
  6. Add mashed bananas and vanilla extract to the mixture, stirring until just combined.
  7. Switch to a spatula for the final mixing. Gently fold the dry ingredients into the wet mixture, avoiding overmixing.
  8. Pour batter into the prepared loaf tin. Sprinkle walnuts on top, if using.
  9. Bake for 1 hour, or until a skewer inserted into the center comes out clean.
  10. Cool in the tin for 15 minutes before transferring to a wire rack to cool completely.
