Ingredients

Instructions
- Preheat oven to 160 °C (320°F) with fan function. Line an 8.5 x 4.5 inch loaf tin with greased baking paper.
- Mash ripe bananas until smooth and creamy. Set aside.
- In a separate bowl, combine flour, cornstarch, baking powder, baking soda, salt, and cinnamon. Whisk until well-mixed.
- In a large mixing bowl, cream butter, brown sugar, and vegetable oil with an electric mixer for about 2 minutes until light and fluffy.
- Incorporate the egg into the creamed mixture, mixing until smooth and well-blended.
- Add mashed bananas and vanilla extract to the mixture, stirring until just combined.
- Switch to a spatula for the final mixing. Gently fold the dry ingredients into the wet mixture, avoiding overmixing.
- Pour batter into the prepared loaf tin. Sprinkle walnuts on top, if using.
- Bake for 1 hour, or until a skewer inserted into the center comes out clean.
- Cool in the tin for 15 minutes before transferring to a wire rack to cool completely.
- Serve warm with butter or cream cheese.
