Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh peaches, diced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust.
  2. In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Fold in the diced peaches and mixed berries into the cheesecake mixture.
  5. Pour the cheesecake filling over the crust in the springform pan and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Once set, remove from the springform pan and garnish with additional berries and peach slices if desired.
