Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh peaches, diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan to form the crust.
- In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Fold in the diced peaches and mixed berries into the cheesecake mixture.
- Pour the cheesecake filling over the crust in the springform pan and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Once set, remove from the springform pan and garnish with additional berries and peach slices if desired.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Feel free to substitute other fruits based on your preference.
- This cheesecake can be made a day in advance for convenience.
