Ingredients
- 8 oz pasta (your choice)
- 2 large onions, thinly sliced
- 4 cups beef broth
- 1 cup shredded Gruyère cheese
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add the sliced onions and cook until caramelized, about 15-20 minutes.
- Stir in the thyme, salt, and pepper.
- Add the pasta and beef broth to the pot.
- Bring to a boil, then reduce heat and simmer until pasta is cooked, about 10-12 minutes.
- Stir in the Gruyère cheese until melted and creamy.
- Serve hot, garnished with additional cheese if desired.

- For a vegetarian version, use vegetable broth instead of beef broth.
