Ingredients
- 1 lb chicken breast, diced
- 1 package (16 oz) gnocchi
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Add onions, carrots, celery, and garlic; sauté until vegetables are tender.
- Stir in thyme, rosemary, salt, and pepper.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until they float to the top.
- Reduce heat and stir in heavy cream; simmer for a few minutes.
- Serve hot and enjoy!

- Feel free to add your favorite vegetables.
- For a lighter version, substitute heavy cream with half-and-half.
