Description

A delightful Mediterranean dish combining spaghetti with fresh sardines, fennel, and a hint of sweetness from raisins and pine nuts.


Ingredients

  • 400g spaghetti
  • 200g fresh sardines, cleaned and filleted
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bulb of fennel, chopped
  • 100g pine nuts
  • 50g raisins
  • 1 pinch of saffron
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the chopped fennel and cook until soft.
  4. Stir in the pine nuts, raisins, and saffron, cooking for a few minutes until fragrant.
  5. Add the sardines to the pan, gently folding them into the mixture. Cook for another 5 minutes.
  6. Combine the cooked spaghetti with the sardine mixture, mixing well.
  7. Season with salt and pepper, and garnish with fresh parsley before serving.

Notes

Canned sardines can be used as a substitute for fresh. Adjust seasoning to taste.
