Description
A delightful Mediterranean dish combining spaghetti with fresh sardines, fennel, and a hint of sweetness from raisins and pine nuts.
Ingredients
- 400g spaghetti
- 200g fresh sardines, cleaned and filleted
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 bulb of fennel, chopped
- 100g pine nuts
- 50g raisins
- 1 pinch of saffron
- Salt and pepper to taste
- Olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the chopped fennel and cook until soft.
- Stir in the pine nuts, raisins, and saffron, cooking for a few minutes until fragrant.
- Add the sardines to the pan, gently folding them into the mixture. Cook for another 5 minutes.
- Combine the cooked spaghetti with the sardine mixture, mixing well.
- Season with salt and pepper, and garnish with fresh parsley before serving.
Notes
Canned sardines can be used as a substitute for fresh. Adjust seasoning to taste.
