Description
Delicious and easy-to-make peach muffins topped with a crumbly topping, perfect for breakfast or a snack.
Ingredients
- 1 ¾ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ½ cup granulated sugar
- 1 large egg
- ¾ cup milk (any kind)
- â…“ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup diced fresh peaches (or well-drained canned peaches)
- â…“ cup brown sugar
- â…“ cup all-purpose flour (for crumb topping)
- ½ tsp ground cinnamon
- 2 ½ tbsp melted butter
Instructions
- Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease it.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk the egg, milk, oil, and vanilla until smooth.
- Combine wet and dry ingredients, mixing until just combined.
- Gently fold in the diced peaches.
- In a small bowl, mix brown sugar, flour, and cinnamon. Stir in melted butter until crumbly.
- Divide muffin batter evenly among the cups, filling ¾ full. Sprinkle crumb topping on each muffin.
- Bake 20–25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes in the pan, then move to a wire rack.
Notes
- For best results, use fresh peaches when in season.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to add nuts or other fruits for variation.
