Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup granulated sugar
  • 1 large egg
  • ¾ cup milk (any kind)
  • â…“ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup diced fresh peaches (or well-drained canned peaches)
  • â…“ cup brown sugar
  • â…“ cup all-purpose flour (for crumb topping)
  • ½ tsp ground cinnamon
  • 2 ½ tbsp melted butter

Instructions

  1. Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, whisk the egg, milk, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients, mixing until just combined.
  5. Gently fold in the diced peaches.
  6. In a small bowl, mix brown sugar, flour, and cinnamon. Stir in melted butter until crumbly.
  7. Divide muffin batter evenly among the cups, filling ¾ full. Sprinkle crumb topping on each muffin.
  8. Bake 20–25 minutes or until a toothpick comes out clean.
  9. Cool for 5 minutes in the pan, then move to a wire rack.
