Ingredients
For the crackers:
1 cup all-purpose flour (or whole wheat flour)
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cold unsalted butter, cubed
1/4 cup water (more if needed)
For the peanut butter filling:
1/2 cup natural peanut butter (smooth or crunchy)
1–2 teaspoons honey or maple syrup (optional)
Pinch of sea salt (optional)
Instructions

Preheat oven to 375°F (190°C).

In a mixing bowl, whisk together the flour, baking powder, and salt.

Cut in the butter until mixture resembles coarse crumbs.

Add water gradually, stirring until a firm dough forms.

Roll out the dough thinly and cut into desired shapes (squares, rounds, etc.).

Place on parchment-lined baking sheet. Prick each cracker with a fork.

Bake for 12–15 minutes or until lightly golden and crisp.

Let crackers cool completely.

Mix peanut butter with honey/maple syrup and a pinch of salt if desired.

Spread filling on half the crackers and sandwich with the remaining ones.
