Ingredients
- 2 cups all-purpose flour
- 1.5 cups granulated sugar
- 0.5 cups unsalted butter, softened
- 1 cup pineapple juice (fresh juice is preferred)
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
- One at a time, add the eggs to the mixture, ensuring each is fully incorporated before the next.
- Add the pineapple juice and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined—don’t overmix!
- Transfer your batter to the prepared baking pan, smoothing the top.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding crushed pineapple to the batter.
