Make juicy, smoky Qdoba-style chicken at home with this easy copycat recipe using simple ingredients and bold Mexican flavors.


Ingredients

For the chicken:

2 lbs boneless, skinless chicken thighs (or breasts)

For the marinade:

1/4 cup olive oil

3 tbsp lime juice (fresh)

2 garlic cloves, minced

1 tbsp chipotle peppers in adobo sauce, minced

1 tsp smoked paprika

1 tsp ground cumin

1 tsp chili powder

1/2 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional)

To finish:

Chopped fresh cilantro

Lime wedges for serving


Instructions

  1. Make the marinade: Combine olive oil, lime juice, garlic, chipotle, and spices in a bowl or zip-lock bag.

  2. Marinate the chicken: Add chicken to the marinade and coat evenly. Refrigerate for at least 2 hours, ideally overnight.

  3. Preheat grill or skillet: Heat to medium-high. Lightly oil the surface.

  4. Grill the chicken: Cook for 5–6 minutes per side until the internal temperature reaches 165°F (75°C).

  5. Rest the chicken: Let it rest for 5 minutes after grilling.

  6. Slice and serve: Slice the chicken, garnish with cilantro, and serve with lime wedges.

Notes

  • Use chicken thighs for juicier, more flavorful results.

  • Marinate overnight for the most authentic flavor.

  • Grill over charcoal for a smoky finish, but a skillet works too.
