A quick and easy recipe for Instant Pot beef and rice that is perfect for a delightful dinner.

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 1 can (15 oz) diced tomatoes with juice
  • 2 cups beef broth (or water)
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt & pepper, to taste
  • Fresh parsley or cilantro, for garnish (optional)

Instructions

  1. Set Instant Pot to sauté. Add ground beef, onion, and garlic. Cook for 5–7 minutes, until beef is browned and onions are softened. Drain excess fat.
  2. Stir in rinsed rice, tomatoes (with juice), paprika, chili powder, salt, and pepper. Mix well.
  3. Pour in beef broth. Stir so rice is submerged.
  4. Lock lid, set to manual high pressure for 10 minutes. Let it naturally release for 10 minutes, then quick release.
  5. Open lid, fluff with a fork, and adjust seasoning if needed. Garnish with parsley or cilantro. Serve hot!
