A quick and easy recipe for Instant Pot beef and rice that is perfect for a delightful dinner.
Ingredients
- 1 lb lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice, rinsed
- 1 can (15 oz) diced tomatoes with juice
- 2 cups beef broth (or water)
- 1 tsp paprika
- 1 tsp chili powder
- Salt & pepper, to taste
- Fresh parsley or cilantro, for garnish (optional)
Instructions
- Set Instant Pot to sauté. Add ground beef, onion, and garlic. Cook for 5–7 minutes, until beef is browned and onions are softened. Drain excess fat.
- Stir in rinsed rice, tomatoes (with juice), paprika, chili powder, salt, and pepper. Mix well.
- Pour in beef broth. Stir so rice is submerged.
- Lock lid, set to manual high pressure for 10 minutes. Let it naturally release for 10 minutes, then quick release.
- Open lid, fluff with a fork, and adjust seasoning if needed. Garnish with parsley or cilantro. Serve hot!
Notes
- For a spicier dish, add more chili powder or diced jalapeños.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This recipe can be easily doubled for larger servings.
