Ingredients
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs (regular or gluten-free)
- 1/2 cup grated carrot
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese (optional)
- 2 large eggs
- 2 tablespoons chopped fresh parsley
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for cooking
- burger buns and toppings of choice (lettuce, tomato, avocado, sauce)
Instructions
- In a large bowl, combine quinoa, breadcrumbs, carrot, onion, bell pepper, garlic, Parmesan cheese (if using), eggs, parsley, smoked paprika, cumin, salt, and black pepper. Mix well.
- Shape the mixture into 4 patties. Add more breadcrumbs if needed.
- Heat olive oil in a skillet. Cook patties for 4-5 minutes per side until golden brown and cooked through.
- Place patties on toasted buns, add desired toppings, and enjoy!
Notes
- For a vegan version, omit the eggs and use a flaxseed meal substitute.
