Description
This recipe guides you to make refreshing red white and blue popsicles, perfect for summer celebrations.
Ingredients
- 6 to 8 large strawberries (about 5 ounces)
- 1/2 cup blueberries (about 2.5 ounces)
- 1 cup vanilla yogurt or vanilla Greek yogurt (or plain yogurt or lemon yogurt)
- 1/2 cup heavy whipping cream
- 1/4 cup pure maple syrup or honey
- 1 teaspoon vanilla
Instructions
- To make strawberry stars, cut off the stems and slice each strawberry from the top down about 1 centimeter thick. Use a 1-inch star cookie cutter to punch out star shapes from each slice and set aside.
- In a measuring cup, combine the yogurt, heavy whipping cream, maple syrup, and vanilla extract.
- Place strawberry stars and blueberries in the popsicle mold, pushing strawberries to the sides for visibility. Pour in the yogurt mixture halfway, then add more berries and repeat until full.
- Place lids on the molds and transfer to the freezer for 45 to 60 minutes.
- Insert a popsicle stick in the center of each popsicle and place back in the freezer for at least 3 hours until completely firm and frozen.
- If using a silicone mold, push on the bottom while pulling up on the popsicle stick to remove. For difficulty, run warm water over the outside bottoms of the mold for 5 seconds.
