Ingredients
- 1 cup dried white beans (e.g., cannellini or navy beans)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 pound smoked beef (or smoked sausage), sliced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the dried beans and soak them in water overnight. Drain before using.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic, carrots, and celery. Cook for another 5 minutes until the vegetables soften.
- Pour in the beef broth and add the soaked beans, smoked beef, thyme, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for about 90 to 120 minutes, or until the beans are tender.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and enjoy hot.
