Ingredients

  • 1 cup dried white beans (e.g., cannellini or navy beans)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 pound smoked beef (or smoked sausage), sliced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the dried beans and soak them in water overnight. Drain before using.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the garlic, carrots, and celery. Cook for another 5 minutes until the vegetables soften.
  4. Pour in the beef broth and add the soaked beans, smoked beef, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for about 90 to 120 minutes, or until the beans are tender.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving.
  8. Garnish with fresh parsley and enjoy hot.
