Description

Make savory sausage crepes with cheesy filling and buttery crepes. A perfect comfort food for brunch, dinner, or meal prep!


Ingredients

For the Crepes:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 1/4 cups milk

  • 2 tablespoons melted butter (plus more for the pan)

  • 1/4 teaspoon salt

For the Sausage Filling:

  • 1 lb (450g) ground sausage (pork, turkey, chicken, or plant-based)

  • 1 small onion, diced

  • 1 clove garlic, minced

  • 1/2 cup shredded cheese (cheddar, Swiss, or mozzarella)

  • 1 tablespoon chopped parsley or chives

  • Salt and pepper to taste


Instructions

  1. Prepare the crepe batter: In a blender or bowl, mix flour, eggs, milk, butter, and salt until smooth. Let rest 15–30 minutes.

  2. Make the crepes: Heat a lightly buttered nonstick skillet over medium heat. Pour in 1/4 cup batter, swirl to coat, and cook 1–2 minutes per side until golden. Repeat with remaining batter.

  3. Cook the sausage filling: In a skillet over medium heat, cook sausage until browned. Add onion and garlic, sauté for 3–4 minutes until soft. Remove from heat.

  4. Add cheese and herbs: Stir shredded cheese and herbs into the sausage mixture. Season with salt and pepper.

  5. Assemble the crepes: Place sausage filling in the center of each crepe, roll or fold, and arrange seam-side down.

  6. Optional: Top with additional cheese or sauce and warm in the oven at 350°F (175°C) for 5–10 minutes before serving.

Notes

  • Resting the batter ensures soft, flexible crepes.

  • Use a nonstick or crepe pan to make flipping easier.

  • Double the batch and freeze extra crepes for later.

  • Customize the filling with veggies, different cheeses, or herbs.

  • Serve with sauces like béchamel, tomato cream, or sour cream for extra flavor.
