Ingredients
For the Crepes:

1 cup all-purpose flour

For the Sausage Filling:

1 lb (450g) ground sausage (pork, turkey, chicken, or plant-based)

1 small onion, diced

1 clove garlic, minced

1/2 cup shredded cheese (cheddar, Swiss, or mozzarella)

1 tablespoon chopped parsley or chives

Salt and pepper to taste
Instructions

Prepare the crepe batter: In a blender or bowl, mix flour, eggs, milk, butter, and salt until smooth. Let rest 15–30 minutes.

Make the crepes: Heat a lightly buttered nonstick skillet over medium heat. Pour in 1/4 cup batter, swirl to coat, and cook 1–2 minutes per side until golden. Repeat with remaining batter.

Cook the sausage filling: In a skillet over medium heat, cook sausage until browned. Add onion and garlic, sauté for 3–4 minutes until soft. Remove from heat.

Add cheese and herbs: Stir shredded cheese and herbs into the sausage mixture. Season with salt and pepper.

Assemble the crepes: Place sausage filling in the center of each crepe, roll or fold, and arrange seam-side down.

Optional: Top with additional cheese or sauce and warm in the oven at 350°F (175°C) for 5–10 minutes before serving.
