Ingredients

Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, whisk cornmeal, flour, baking powder, and salt until well mixed.
- In another bowl, whisk eggs, buttermilk, and melted butter until smooth and pale.
- Pour wet ingredients into the dry mix, and gently fold until just moistened.
- Gently stir in whole kernel corn, sliced green onions, diced jalapeño (if using), and sour cream until evenly distributed.
- Fold in sharp cheddar cheese, reserving a handful for the topping.
- Spread the mixture evenly into the greased baking dish, smoothing the top with a spatula.
- Sprinkle the remaining cheddar cheese and a pinch of smoked paprika on top.
- Bake at 375°F for 30–35 minutes until golden brown and set in the center.
- Let the savory cornbread casserole cool for 5–10 minutes before serving.
