A comforting casserole that transforms the classic Reuben sandwich into a hearty warm meal, perfect for gatherings or family dinners.
Ingredients
- 2 cups rye bread, cubed
- 1 pound corned beef, sliced
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1/2 cup Russian or Thousand Island dressing
- 4 large eggs
- 1 cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a greased baking dish, layer half of the rye bread cubes.
- Add half of the corned beef, followed by half of the sauerkraut and half of the Swiss cheese.
- Repeat the layers with the remaining ingredients.
- In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the layered ingredients.
- Bake for 45-50 minutes or until the egg is set and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
Pair the bake with a light green salad or serve with pickles or potato chips for added crunch. Customize by adding sautéed onions or peppers or swapping corned beef for pastrami.
