Description

A comforting casserole that transforms the classic Reuben sandwich into a hearty warm meal, perfect for gatherings or family dinners.


Ingredients

  • 2 cups rye bread, cubed
  • 1 pound corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Russian or Thousand Island dressing
  • 4 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a greased baking dish, layer half of the rye bread cubes.
  3. Add half of the corned beef, followed by half of the sauerkraut and half of the Swiss cheese.
  4. Repeat the layers with the remaining ingredients.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the layered ingredients.
  6. Bake for 45-50 minutes or until the egg is set and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

Pair the bake with a light green salad or serve with pickles or potato chips for added crunch. Customize by adding sautéed onions or peppers or swapping corned beef for pastrami.
