Ingredients

2 potatoes, peeled and grated

1 onion, finely chopped

Oil for frying

Fresh parsley, chopped

100g mozzarella cheese, shredded

6 tortillas

Salt and black pepper, to taste


Instructions

  • Prepare the Ingredients

    • Peel and grate the potatoes.

    • Finely chop the onion.

    • Shred the mozzarella and chop the parsley. Set aside.

  • Sauté the Onion

    • Heat 1 tablespoon of oil in a pan over medium heat.

    • Cook the chopped onion for 3–5 minutes until soft and fragrant.

  • Cook the Potatoes

    • Add grated potatoes to the onion. Stir and cook for 5–7 minutes until tender and lightly golden.

    • Season with salt and pepper.

  • Assemble the Tortillas

    • Lay tortillas flat.

    • Spread the potato-onion mixture on one half of each tortilla.

    • Sprinkle shredded mozzarella over the top.

  • Fold and Fry

    • Fold each tortilla in half.

    • Heat a bit of oil in a skillet over medium heat.

    • Fry each side for 2–3 minutes until golden and crispy.

 

  • Garnish and Serve

    • Transfer to a plate, sprinkle with fresh parsley.

    • Serve warm with your favorite dip or sauce.

Notes

  • Drain excess moisture from grated potatoes to avoid sogginess.

  • Use a non-stick pan to prevent tearing or sticking.

  • Don’t overfill tortillas—this helps them stay sealed and crisp.

  • Add herbs, garlic powder, or chili flakes for extra flavor.
