Description

Shepherd’s Pie Baked Potato is a comforting dish that combines the classic flavors of shepherd’s pie with the heartiness of baked potatoes.


Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup beef broth
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Scrub the potatoes clean and prick them with a fork. Bake for 50–60 minutes until tender.
  2. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened.
  3. Add ground meat to the skillet and cook until browned. Drain excess fat if necessary.
  4. Stir in tomato paste, Worcestershire sauce, frozen vegetables, and beef broth. Simmer for 8–10 minutes until mixture thickens. Season with salt and pepper.
  5. When potatoes are ready, cut them in half lengthwise and scoop out most of the insides into a bowl, leaving a sturdy shell.
  6. Mash the potato flesh with butter, milk, and cheese until creamy. Season to taste.
  7. Spoon the meat mixture into each potato shell, then top with the mashed potatoes.
  8. Return stuffed potatoes to the oven and bake for 15 minutes, or until golden and heated through. Garnish with parsley before serving.

  • Feel free to use ground turkey or chicken as a lighter alternative.
  • For a vegetarian version, substitute the meat with lentils or mushrooms.
