Description

Sautéed to perfection, this Skillet Zucchini and Mushrooms recipe is a quick, healthy, and flavorful side dish perfect for weeknight dinners or meal prep!


Ingredients

  • 2 tablespoons olive oil or butter

  • 2 medium zucchini, sliced into half-moons

  • 8 oz (225 g) cremini or white button mushrooms, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)

  • Salt and black pepper, to taste

  • 2 tablespoons grated Parmesan cheese (optional, for garnish)

  • 1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

 

  • Heat the olive oil or butter in a large skillet over medium heat.

  • Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.

  • Stir in the zucchini and cook for 5-7 minutes, or until the zucchini is tender but still slightly crisp.

  • Add the minced garlic, Italian seasoning, crushed red pepper flakes (if using), salt, and black pepper. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant.

  • Remove the skillet from heat. Sprinkle with Parmesan cheese and fresh parsley, if desired.

  • Serve warm as a side dish or enjoy on its own for a light meal.

Notes

           For extra flavor, squeeze a bit of fresh lemon juice over the dish before       serving.

  • Add a handful of cherry tomatoes or spinach for more color and variety.This dish pairs well with grilled chicken, steak, or fish.
