Description

This slow cooker creamy fiesta chicken recipe is a simple, dump-and-go meal with only 5 main ingredients. It features tender, fall-apart chicken in a creamy sauce with corn and beans. Perfect for a quick weeknight dinner, serve it over rice with your favorite toppings.


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 jar (16 oz) salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 bar (8 oz) cream cheese, softened

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. In a small bowl, mix together the salsa, black beans, corn, cumin, garlic powder, chili powder, and kosher salt.
  3. Pour the salsa mixture over the chicken breasts.
  4. Cover the slow cooker and cook on LOW for 6-8 hours.
  5. Shred the chicken inside the slow cooker using two forks or a handheld mixer on low speed.
  6. Stir everything together.
  7. Microwave the cream cheese for 1 minute until soft and warm.
  8. Add the softened cream cheese to the shredded chicken mixture and stir until well combined.
  9. Serve the slow cooker creamy fiesta chicken over rice with your favorite toppings.

Notes

  • For a spicier fiesta chicken, add a can of jalapeños or diced green chilies.
  • You can also add cayenne pepper or hot sauce for more heat.
  • If you are short on time, you can place the cream cheese on top of the other ingredients and cook it all together for the last hour.
  • To make this a true dump-and-go recipe, skip the mixing bowl and add all ingredients directly to the slow cooker.
