This slow cooker creamy fiesta chicken recipe is a simple, dump-and-go meal with only 5 main ingredients. It features tender, fall-apart chicken in a creamy sauce with corn and beans. Perfect for a quick weeknight dinner, serve it over rice with your favorite toppings.
Ingredients
- 4 boneless, skinless chicken breasts (about 2 pounds)
- 1 jar (16 oz) salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- 1 bar (8 oz) cream cheese, softened
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- In a small bowl, mix together the salsa, black beans, corn, cumin, garlic powder, chili powder, and kosher salt.
- Pour the salsa mixture over the chicken breasts.
- Cover the slow cooker and cook on LOW for 6-8 hours.
- Shred the chicken inside the slow cooker using two forks or a handheld mixer on low speed.
- Stir everything together.
- Microwave the cream cheese for 1 minute until soft and warm.
- Add the softened cream cheese to the shredded chicken mixture and stir until well combined.

Notes
- For a spicier fiesta chicken, add a can of jalapeños or diced green chilies.
