Ingredients
- 2–3 lbs pork loin
- 1 cup pineapple juice
- 1 cup diced pineapple
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Season the pork loin with salt and pepper.
- In a bowl, mix together pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, and ginger.
- Place the pork loin in the slow cooker and pour the pineapple mixture over it.
- Cover and cook on low for 6-8 hours or until the pork is tender.
- Once cooked, remove the pork and let it rest before slicing.
- Serve with the sauce drizzled over the top.

- For a thicker sauce, you can remove the pork and simmer the sauce on the stove until it reduces.
