Ingredients
- 2–3 boneless chicken breasts
- 2 cups corn (frozen, canned, or fresh grilled)
- 4 oz cream cheese (cubed)
- 1/3 cup cotija cheese
- Juice of 1 lime (fresh squeezed)
- 2 garlic cloves (minced)
- 1/2 tsp chili powder
Instructions
- Place the chicken breasts in the slow cooker.
- Add the corn, cream cheese, cotija cheese, lime juice, minced garlic, and chili powder on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and mix everything together in the slow cooker.
- Serve warm, garnished with additional cotija cheese and lime if desired.

- For a richer flavor, consider using chicken thighs instead of breasts.
