Description

A simple and flavorful slow cooker recipe featuring chicken, corn, and creamy ingredients, inspired by Mexican street corn.

Ingredients

  • 23 boneless chicken breasts
  • 2 cups corn (frozen, canned, or fresh grilled)
  • 4 oz cream cheese (cubed)
  • 1/3 cup cotija cheese
  • Juice of 1 lime (fresh squeezed)
  • 2 garlic cloves (minced)
  • 1/2 tsp chili powder

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the corn, cream cheese, cotija cheese, lime juice, minced garlic, and chili powder on top of the chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken with two forks and mix everything together in the slow cooker.
  5. Serve warm, garnished with additional cotija cheese and lime if desired.

Notes

  • For a richer flavor, consider using chicken thighs instead of breasts.
  • Fresh grilled corn adds a gourmet touch, especially in summer.
  • For a vegan option, substitute chicken with a plant-based protein and use vegan cream cheese.
  • Adjust the spice level by adding more chili powder or hot sauce as desired.
