Description

This slow cooker sweet garlic chicken recipe is an easy, dump-and-go meal. Tender chicken slow cooks in a homemade sweet garlic sauce made with lemon-lime soda, soy sauce, fresh garlic, and brown sugar. Perfect for a simple weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3/4 cup packed light brown sugar
  • 1/2 cup rice vinegar
  • 1/2 cup lemon-lime soda (7-up or Sprite)
  • 1/3 cup low-sodium soy sauce
  • 4 garlic cloves, minced
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Cooked white rice, green onions, and sesame seeds for serving

Instructions

  1. Lay the chicken breasts in the bottom of the slow cooker.
  2. In a small bowl, whisk together the light brown sugar, rice vinegar, lemon-lime soda, soy sauce, minced garlic, and black pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on LOW for 6-8 hours.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir.
  6. In a small bowl, whisk together the cornstarch and cold water until smooth.
  7. Pour the cornstarch mixture into the slow cooker. Stir and cook for a few minutes, uncovered, until the sauce thickens.
  8. Serve the slow cooker sweet garlic chicken over cooked white rice. Garnish with green onions and sesame seeds.
