Ingredients
- 2 cups of chicken breast, diced
- 1 can (400ml) of coconut milk
- 1 cup of fresh basil leaves, chopped
- 2 tablespoons of soy sauce
- 1 tablespoon of curry powder
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- 4 cups of cooked rice
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and grated ginger, sautéing until fragrant.
- Add the diced chicken breast and cook until browned.
- Stir in the curry powder, soy sauce, and coconut milk.
- Simmer for 15 minutes, allowing the sauce to thicken.
- Mix in the chopped basil leaves and season with salt and pepper.
- Serve the spiced coconut basil chicken over cooked rice.
Notes
- For a spicier version, add red pepper flakes.
