A refreshing and creamy treat made with strawberries and coconut milk, perfect for hot summer days.
Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 cup coconut milk
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract
Instructions
- In a blender, combine the sliced strawberries, coconut milk, honey or maple syrup, and vanilla extract.
- Blend until smooth and well combined.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 4-6 hours or until solid.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds.

Notes
- For a creamier texture, use full-fat coconut milk.
- Feel free to add other fruits like bananas or mangoes for variety.
