Ingredients
- 9 lasagna noodles
- 1 lb ground beef
- 1 packet taco seasoning
- 2 cups salsa
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can black beans, drained and rinsed
- 1 cup corn, drained
- 1/2 cup chopped green onions
- 1/2 cup chopped cilantro (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, brown the ground beef over medium heat, then drain excess fat.
- Add taco seasoning and salsa to the beef, stirring to combine.
- In a baking dish, spread a layer of the beef mixture, followed by a layer of noodles, then a layer of cheese.
- Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
- Let it cool for a few minutes before serving, then top with sour cream, green onions, and cilantro if desired.
Notes
- For a vegetarian version, substitute ground beef with lentils or mushrooms.
- Feel free to add your favorite taco toppings like jalapeños or avocado.
