Description
These Thai Peanut Chicken Wraps combine chicken, fresh veggies, and a creamy peanut dressing for a delicious meal.
Ingredients
- 1/2 cup peanut butter
- 1/4 cup low sodium soy sauce
- 2 tablespoons brown sugar or honey
- 2 tablespoons rice wine vinegar
- 2 cloves fresh garlic, minced
- 1 tablespoon fresh ginger, minced
- 1–2 tablespoons sriracha sauce (to taste)
- 4 cups coleslaw mix
- 2 cups cooked chicken breast, chopped
- 1/2 cup fresh cilantro, chopped
- 1/2 cup roasted peanuts, chopped
- 4 large flour tortillas
Instructions
- Combine peanut butter, soy sauce, brown sugar, rice vinegar, minced garlic, minced ginger, and sriracha in a bowl. Whisk until smooth.
- Place chopped chicken, coleslaw mix, grated carrots, cilantro, and peanuts in a large bowl. Toss gently.
- Pour peanut dressing over the filling and fold to coat evenly. Let rest for 3 to 5 minutes.
- Warm tortillas in the microwave or skillet to make them pliable.
- Lay each tortilla flat, add filling, fold in sides, and roll tightly. Slice if desired and serve immediately.
Notes
- Use natural peanut butter for best flavor.
- Adjust sriracha to control heat level.
- Feel free to use rotisserie chicken for convenience.
