Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1–2 tablespoons sriracha sauce (to taste)
  • 4 cups coleslaw mix
  • 2 cups cooked chicken breast, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup roasted peanuts, chopped
  • 4 large flour tortillas

Instructions

  1. Combine peanut butter, soy sauce, brown sugar, rice vinegar, minced garlic, minced ginger, and sriracha in a bowl. Whisk until smooth.
  2. Place chopped chicken, coleslaw mix, grated carrots, cilantro, and peanuts in a large bowl. Toss gently.
  3. Pour peanut dressing over the filling and fold to coat evenly. Let rest for 3 to 5 minutes.
  4. Warm tortillas in the microwave or skillet to make them pliable.
  5. Lay each tortilla flat, add filling, fold in sides, and roll tightly. Slice if desired and serve immediately.
