Ingredients

34 medium Yukon Gold or Russet potatoes, thinly sliced

1 large yellow onion, thinly sliced

2 tablespoons olive oil or butter

(Optional: Salt and pepper to taste)


Instructions

  1. Slice the potatoes and onions thinly (about 1/8 inch). Optional: soak potatoes in cold water for 15–30 minutes for crispier texture. Drain and pat dry.

  2. Heat oil or butter in a large skillet over medium heat until shimmering.

  3. Add potatoes in a single layer and cook undisturbed for 5–7 minutes until the bottom is golden and crispy.

  4. Flip the potatoes and add sliced onions. Continue cooking, stirring occasionally, until potatoes are tender and onions are caramelized—about 15–20 minutes.

  5. Season with salt and pepper (optional) and serve hot.

Notes

  • Use a cast iron skillet for the best browning and crisp edges.

  • Don’t overcrowd the pan—work in batches if needed for even cooking.
