Ingredients
3–4 medium Yukon Gold or Russet potatoes, thinly sliced
1 large yellow onion, thinly sliced
2 tablespoons olive oil or butter

Instructions

Slice the potatoes and onions thinly (about 1/8 inch). Optional: soak potatoes in cold water for 15–30 minutes for crispier texture. Drain and pat dry.

Heat oil or butter in a large skillet over medium heat until shimmering.
