Description

Ingredients

  • 2 cups chicken broth (or vegetable broth)
  • 1 cup shredded rotisserie chicken
  • 1 cup salsa (mild, medium, or hot)
  • ½ cup canned corn, drained
  • ½ cup black beans (optional)
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt & pepper to taste
  • 2 small flour or corn tortillas, cut into strips
  • Toppings: avocado, shredded cheese, sour cream, cilantro, lime wedges

Instructions

  1. In a saucepan, combine broth, salsa, chicken, corn, beans, cumin, and chili powder. Season with salt and pepper. Simmer for 10 minutes.
  2. Meanwhile, air fry or pan-fry tortilla strips until golden and crispy.
  3. Ladle soup into bowls and top with tortilla strips, avocado, cheese, sour cream, cilantro, and lime juice.

Notes

  • Adjust the spice level by choosing different salsa heat levels.
