A delicious and easy recipe for Tortilla Soup, perfect for a comforting meal.
Ingredients
- 2 cups chicken broth (or vegetable broth)
- 1 cup shredded rotisserie chicken
- 1 cup salsa (mild, medium, or hot)
- ½ cup canned corn, drained
- ½ cup black beans (optional)
- ½ tsp cumin
- ½ tsp chili powder
- Salt & pepper to taste
- 2 small flour or corn tortillas, cut into strips
- Toppings: avocado, shredded cheese, sour cream, cilantro, lime wedges
Instructions
- In a saucepan, combine broth, salsa, chicken, corn, beans, cumin, and chili powder. Season with salt and pepper. Simmer for 10 minutes.
- Meanwhile, air fry or pan-fry tortilla strips until golden and crispy.
- Ladle soup into bowls and top with tortilla strips, avocado, cheese, sour cream, cilantro, and lime juice.
Notes
- Adjust the spice level by choosing different salsa heat levels.
- For a vegetarian version, use vegetable broth and omit the chicken.
