Description

Ingredients

  • 2 medium zucchini, sliced into rounds or spears
  • 2 tablespoons olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss zucchini with olive oil, garlic powder, dried oregano, salt, and pepper.
  3. In another bowl, mix breadcrumbs and Parmesan cheese.
  4. Coat each zucchini slice in breadcrumb mixture, pressing lightly to stick.
  5. Place coated zucchini in a single layer on the baking sheet.
  6. Bake for 20–25 minutes, flipping halfway through, until golden and tender.
  7. Transfer to a serving dish and garnish with fresh parsley.
