Description
A crispy and flavorful side dish made with roasted zucchini, Parmesan cheese, and breadcrumbs.
Ingredients
- 2 medium zucchini, sliced into rounds or spears
- 2 tablespoons olive oil
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss zucchini with olive oil, garlic powder, dried oregano, salt, and pepper.
- In another bowl, mix breadcrumbs and Parmesan cheese.
- Coat each zucchini slice in breadcrumb mixture, pressing lightly to stick.
- Place coated zucchini in a single layer on the baking sheet.
- Bake for 20–25 minutes, flipping halfway through, until golden and tender.
- Transfer to a serving dish and garnish with fresh parsley.
Notes
- For extra crispiness, broil for the last 2-3 minutes of baking.
- Feel free to add other herbs or spices to the breadcrumb mixture for additional flavor.
