Description
A refreshing and vibrant summertime corn salad that combines fresh corn, cherry tomatoes, and a zesty lime dressing.
Ingredients
- 4 cups fresh corn kernels (about 6 ears of corn)
- 1 pint cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño pepper, seeded and finely chopped
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the fresh corn kernels, cherry tomatoes, red onion, cilantro, and jalapeño pepper.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
- Pour the dressing over the corn mixture and toss until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, toss again and adjust the seasoning if needed.
- Serve chilled or at room temperature alongside grilled meats, tacos, or sandwiches.
Notes
- For a sweeter flavor, use sweet corn.
