Ingredients

  • 3 tablespoons Olive Oil (or avocado oil)
  • 3 tablespoons Fresh Lime Juice (or lemon juice)
  • 2 tablespoons Brown Sugar (or maple syrup or coconut sugar)
  • 1 tablespoon Sriracha (adjust for milder flavor)
  • 3 cloves Garlic (minced, fresh preferred)
  • 1 Thai Chile (minced, seeds removed, or jalapeños)
  • 1 teaspoon Coarse Salt (or sea salt)
  • 1 teaspoon Black Pepper (freshly ground or white pepper)
  • 1 pound Large Shrimp (peeled, deveined, tails off)

Instructions

  1. In a resealable plastic bag, combine olive oil, lime juice, brown sugar, Sriracha, minced garlic, minced Thai chile, coarse salt, and black pepper. Seal the bag and shake gently to mix all the flavors together.
  2. Add the large shrimp to the marinade. Seal the bag once more and toss it gently to coat the shrimp thoroughly. Refrigerate for at least 30 minutes for the flavors to develop, or up to an hour for even better taste.
  3. Preheat your grill to high heat, around 450°F, ensuring it’s ready for a beautifully charred finish.
  4. Pour the marinade into a saucepan and bring it to a boil. Then reduce the heat and simmer it for a few minutes before removing it from the heat, creating a tasty baste while grilling.
  5. Carefully thread 4 to 5 shrimp onto skewers, leaving space between each shrimp for even cooking. If using wooden or bamboo skewers, soak them in water for about 30 minutes first to prevent burning.
  6. Oil the grill grates lightly and place the skewers on the grill. Cook for 2-3 minutes, then flip the shrimp, baste with the reserved marinade, and grill for another 2-3 minutes until the shrimp are opaque and wonderfully tender.
