Sweet watermelon, tangy feta, and fresh mint combine in this vibrant salad—perfect for summer meals, BBQs, or light lunches.


Ingredients

Main Ingredients:

4 cups seedless watermelon, cubed or balled

1 cup feta cheese, crumbled or cubed

1/3 cup fresh mint leaves, thinly sliced (chiffonade)

1/4 small red onion, very thinly sliced (optional)

Dressing:

2 tablespoons extra virgin olive oil

1 tablespoon fresh lime or lemon juice

1/2 teaspoon honey (optional)

Freshly ground black pepper, to taste

Optional Add-ins:

1/2 cucumber, diced or thinly sliced

1/4 cup toasted almonds or pistachios

Handful of arugula or baby spinach

Drizzle of balsamic glaze

Dash of chili flakes


Instructions

  1. Prepare the ingredients: Cube or ball the watermelon and chill if desired. Crumble or cube the feta. Slice mint into thin ribbons. Optional: soak onion slices in cold water for 5 minutes to soften their bite.

  2. Mix the dressing: Whisk together olive oil, lime/lemon juice, honey (if using), and black pepper in a small bowl or jar.

  3. Assemble the salad: On a large platter or in a salad bowl, combine the watermelon, feta, red onion, and mint.

  4. Dress and toss: Drizzle with dressing and gently toss just before serving to avoid crushing the watermelon.

  5. Serve fresh: Best served chilled or at room temperature within an hour of assembling.

Notes

  • Use chilled watermelon for maximum refreshment.

  • Choose block feta in brine for better flavor and texture.

  • Add mint last minute to preserve its color and aroma.

  • Use a melon baller for an elegant presentation.
