Ingredients
Main Ingredients:
4 cups seedless watermelon, cubed or balled
1 cup feta cheese, crumbled or cubed
1/3 cup fresh mint leaves, thinly sliced (chiffonade)
1/4 small red onion, very thinly sliced (optional)
Dressing:
2 tablespoons extra virgin olive oil
1 tablespoon fresh lime or lemon juice
1/2 teaspoon honey (optional)
Freshly ground black pepper, to taste
Optional Add-ins:
1/2 cucumber, diced or thinly sliced
1/4 cup toasted almonds or pistachios
Handful of arugula or baby spinach
Drizzle of balsamic glaze
