Ingredients
- 1 lb refrigerated pizza dough
- 24 medium cloves garlic (unpeeled)
- 3 tablespoons olive oil (divided)
- Kosher salt
- 1 cup part-skim ricotta cheese
- 8 roasted garlic cloves (from above)
- 2 tablespoons fresh basil, chopped
- 1 teaspoon honey
- ½ teaspoon dried oregano
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 10 ounces frozen chopped spinach, thawed and squeezed dry
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 375°F. Drizzle a baking sheet with 1 tablespoon olive oil. Place pizza dough on the sheet.
- Lay out a large square of foil. Place garlic cloves on foil, drizzle with 1 tablespoon olive oil, and sprinkle with kosher salt. Seal the foil into a packet.
- Roast garlic in the oven for 25 minutes until soft and fragrant. Remove from oven and let cool. Peel the cloves and discard skins.
- Increase oven heat to 450°F.
- Mash 8 of the peeled roasted garlic cloves in a small bowl. Add ricotta, 2 teaspoons olive oil, basil, honey, oregano, ½ teaspoon kosher salt, and pepper. Mix well.
- Stretch the pizza crust to about a 14-inch round and place it on a greased cookie sheet or pizza stone.
- Spoon the ricotta mixture evenly onto the pizza crust.
- Scatter the thawed and squeezed spinach over the ricotta mixture.
- Add the remaining roasted garlic cloves over the spinach.
- Top with shredded mozzarella cheese.
- Bake at 450°F for 9-10 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from oven, let cool for a few minutes, slice, and serve.

- For a quicker option, use pre-made pizza crust.
- If fresh basil is unavailable, use dried basil, but use less as it’s more potent.
