Description

A delicious White Pizza with Spinach and Roasted Garlic, featuring a creamy ricotta sauce, sweet roasted garlic, and fresh spinach on a crispy golden crust. This easy recipe is perfect for a quick weeknight meal or for impressing guests.

Ingredients

  • 1 lb refrigerated pizza dough
  • 24 medium cloves garlic (unpeeled)
  • 3 tablespoons olive oil (divided)
  • Kosher salt
  • 1 cup part-skim ricotta cheese
  • 8 roasted garlic cloves (from above)
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon honey
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Drizzle a baking sheet with 1 tablespoon olive oil. Place pizza dough on the sheet.
  2. Lay out a large square of foil. Place garlic cloves on foil, drizzle with 1 tablespoon olive oil, and sprinkle with kosher salt. Seal the foil into a packet.
  3. Roast garlic in the oven for 25 minutes until soft and fragrant. Remove from oven and let cool. Peel the cloves and discard skins.
  4. Increase oven heat to 450°F.
  5. Mash 8 of the peeled roasted garlic cloves in a small bowl. Add ricotta, 2 teaspoons olive oil, basil, honey, oregano, ½ teaspoon kosher salt, and pepper. Mix well.
  6. Stretch the pizza crust to about a 14-inch round and place it on a greased cookie sheet or pizza stone.
  7. Spoon the ricotta mixture evenly onto the pizza crust.
  8. Scatter the thawed and squeezed spinach over the ricotta mixture.
  9. Add the remaining roasted garlic cloves over the spinach.
  10. Top with shredded mozzarella cheese.
  11. Bake at 450°F for 9-10 minutes, or until the crust is golden and the cheese is melted and bubbly.
  12. Remove from oven, let cool for a few minutes, slice, and serve.

Notes

  • For a quicker option, use pre-made pizza crust.
  • If fresh basil is unavailable, use dried basil, but use less as it’s more potent.
  • The honey is crucial for balancing the flavors.
  • You can substitute spinach with other greens like kale or arugula.
  • For reheating, place the pizza back in the oven to regain crispiness.
